What documents to bring for interview?

Ron, I would appreciate your input about what documents should I carry on interview? My application is based on 5 years as LPR, and I am self-employed if that matters.

Bring your last three years of tax returns, or your tax transcript. It isn't possible to anticipate what they might ask to see in an extreme situation, so don't even try. If they want documentation (which is highly unlikely) they can ask for it.
